Over the past 60 years, there has been much discussion over the safety of consuming monosodium glutamate (MSG). Many individuals consider it an artificial food additive and avoid it at all costs for fear of illness. This fear of MSG has been associated with its inclusion in American Chinese cuisine. Others have created a renaissance of its use, championing it as “pure deliciousness” or the umami flavor. This raises the question: Is MSG a friend or a foe?
